Using a limited amount of instrument choices (no brass instruments like trumpets, for example), and only being able to have up to 4 sound effects/insturments playing at once (any more, and the older ones abruptly stop). While one could still create decent music with such limitations, you're not going to create the next "Otherworld".

You can import music into RMXP, though.

Basically it needs to be an action script placed in an invisible even, using an infinately repeating branch. Inside that branch, you string together various sound effects (usually the group with Piano, Violin, and Drum, though you could always throw in a few boings or clock gongs) along with some wait commands to spread out the notes. It takes quite some trial and error to create music, finding the right pitches, and speed of the songs. Especially since RPGM2 can only have 4 sound effects going on at the same time.

Metallica? Try Zao haha. They would make an interesting boss battle theme.

I was messing around with a DIY karaoke program, and I found that the music from "Kim" by Eminem is actually REALLY good final-boss-battle music. It sounds crazy, but check it out if you can find a MIDI of it (so you the words are gone).
